Geomedia is an excellent geo-processing tool, but i have questions regarding its capability to perform:-
Kindly do advise if this can be done on the software. And if so how do we go about it?
Documentation would also be of great help.

Go to the Hexagon Geospatial documentation portal at http://www.hexagongeospatial.com/support/documentation and click on Documentation Portal Home.
Query on "Grid Analysis". You will find "Grid Analysis" at the top, click on it.
You will see the Grid Getting Started direcitons, but on the left side of screen you will see the different analyst commands including "Classification". Grid turotials are also available with the GeoMedia product.

Many thanks for your feedback. It has been very enlighting.
However in as much as the documentation portal provides information on classification it does not explain how to apply it or even given a real worked example with results.
I kindly need step by step guide on how to go about the procedure for supervised or unsupervised classification.

GM GRID does provide supervised classification, but I believe the Imagine or ERDAS Mapper products would better serve your needs for supervised/unsupervised classification workflows.
Please go to the Community Imagine forum for any questions on Imagine/Mapper.

Lilly, for the three bullets you asked and many other possibilities, I guess you could use the tools provided in Spatial Model Editor that comes with GeoMedia.
You can build the models and execute them within GeoMedia. It is a very friendly and powerfull tool that allows you to create and automate workflows that sometimes you could even understand as "new applications" within GeoMedia or IMAGINE.
There is also some cool recipes in the community like those:
Hope it can help as a way to go
