I am wondering if its possible to take off the "Geospatial Portal" tittle and the Hexagon Icon from the Apollo Portal.
If its possible, How can I do it? Or how can I change it?

In the <Portal>\App_LocalResources you will find localized resources files for the main portal pages. Find the correct one, e.g. Full Full.aspx.resx, and edit the value for Title.Text:

That should do it.

(1) You can edit the Geospatial Portal title under the Appearance tab when editing/configuring the Portal instance under Adminconsole.
(2) The Hexagon icon (Hexagon.png) is defined in the default.css file located in C:\Program Files\Common Files\Hexagon\Services\Instances\YourTestGeospatialPortal\App_Themes\Default
You may edit the default.css file to use alternative icon.
Most of the images of the portal instance are located in this folder:
C:\Program Files\Common Files\Hexagon\Services\Instances\YourTestGeospatialPortal\img
